Pancakes in my mind and heart are soft and fluffy. Yes, in Colombia we eat what I call “American pancakes” The big difference with the Swedish ones is that these ones are really thick. It kind of reminds me of a cake made in a pan … wait PAN – CAKE ha ha. Anyway, pancakes for me are a big deal, as they remind me of home. My dad used to make this for me every Sunday back in Colombia. Sweet memories!
Last year, when I was pregnant, I could not stand eggs (look at them, feel them, eat them, or buy them) . It was one of those things that made me irrationally sick. This means, that my pancakes were far from being fluffy (egg´s mission) Oh and I was craving pancakes like CRAZY. So, I had to do some research and improvise. This is how I found the recipe that changed everything.
In order to get that fluffiness, you need to create some kind of bubbling mixture. To do this you just need to add some apple cider vinegar to your plant-based milk (i used oat milk) Then, you have to whisk whisk whisk and whisk! And just like that, you will get the most delicious pancakes.
Recipe (4 to 5 medium pancakes)
140 grams of flour (find it at Vågen)
240 grams of oat milk
1 tablespoon of baking soda (next month will be available at Vågen)
1 tablespoon of apple cider vinegar (find it at Vågen)
1 tablespoon of rapsolja (find it at Vågen)
A pinch of salt (find it at Vågen)
Sugar if wanted (find it at Vågen)
Mix the apple cider vinegar together with the oat milk, whisk and wait.
Mix the dried ingredients
Mix everything – do not over mix!
